Job Description: Canada’s National Ballet School is currently inviting applications for the full-time, permanent position of Chef de Partie.We invite you to join the vibrant staff community of Canada’s National Ballet School (NBS). As an organization, NBS is continually evolving and we are looking for a professional with unique, new ideas to complement the School’s collaborative work culture.Reporting to the Chef de Cuisine, The Chef de Partie will support the Chef de Cuisine in developing and executing menus, including vegetarian options and specialized diets. This includes meals and snacks for students, patrons of the Mona Campbell Square Café, and catering for internal special events. The Chef de Partie will be supervising and participating in the production and delivery of food during shifts to meet the diverse needs of the Food Services Department. Schedule: 8:00 am – 4:00 pm, Tuesdays – Saturday. Must be available for special events and performances (some evening and weekends may be required)Staff are required to wear prescribed gear in accordance with hygiene/safety requirements (i.e., hair net/head covering, apron, oven mitts, gloves, etc.).Major Duties and Responsibilities
- Supervise, approve and participate in the production of meals and food items by following established menus; performing and/or observing methods of preparation; sampling prepared dishes; viewing colour, texture and garnishments; verifying portion sizes; taking note of special nutritional needs/preferences and dietary restrictions of students.
- Complete Food Services operational requirements by assigning tasks to employees; monitoring production and presentation.
- Supervise the Kitchen staff (kitchen assistants, cooks, and dishwashers) on a specified shift by providing direction and instruction, ensuring quality of standards, managing performance, initiating corrective action.
- Assist in the upkeep of inventory by receiving and inspecting food deliveries while also ensuring proper organization and storage of all supplies.
- Maintain cleanliness, sanitation, health and safety policies by following federal, provincial and municipal regulations; maintaining first aid and CPR certification; ensures staff are properly following all rules and guidelines, while using kitchen equipment safely.
- Ensure that no students miss meals by organizing service to those who may be late due to other commitments. For example, packing of meals and snacks.
- Maintain cost control by reducing and monitoring food waste, ensuring portion control and maintaining standards for quality and quantity of foods.
- Maintain professional and technical knowledge by attending educational workshops; reviewing professional publications; participating in professional activities and required departmental trainings.
- Perform other duties as required to contribute to the team effort and achieve the objectives of the Food Services Department.
Qualifications/Skills/Experience:
- Journeyman Cook Certification with Red Seal or equivalent required. Food Safety Certificate required. First Aid and CPR Certification an asset.
- Minimum 2 years as a Chef de Partie with previous supervisory responsibilities.
- Good technical culinary skills to prepare a wide variety of dishes.
- Excellent knowledge of food preparation, institutional kitchen practice, health & safety procedures and portion sizes
- Good understanding of sanitation and cleanliness in the kitchen.
- Ability to work requires standing for long periods of time and lifting items.
- Ability to work in a fast-paced environment and multi-task.
- Strong verbal communication skills required to supervise staff, resolve minor conflicts and communicate with colleagues, staff, students and customers
- Problem-solving skills
